Blueberry Hill’s Red Beans & Rice

4 c. chopped onions
2 green peppers, chopped into
one-inch squares
1 bunch of celery, chopped with leaves
9 c. kidney beans
2 c. chopped tomatoes
1/2 quart water
2 1/2 T. minced garlic
2 bay leaves
2 T. basil
2 t. salt
2 t. black pepper
1 1/2 T. thyme
1/4 bottle Tabasco

>> Combine all ingredients in pot and bring to a boil.
>> Simmer for 30 minutes, or until veggies are tender.
>> Ladle over white or brown rice.

Serves 4 to 6.
