Revel Kitchen’s Pineapple-Mango Salsa

1 mango, diced small
1 small jicama, diced small
1 medium pineapple, diced small
Kosher salt, to taste
Black pepper, to taste
1 small red onion, minced
1 red bell pepper, diced small
2 serrano peppers, minced
2 limes, juiced
1 oz. olive oil
2 T. fresh cilantro, chopped

>> Mix together olive oil, lime juice, salt, pepper and cilantro. Add remaining ingredients, season to taste.
>> Serve on top of blackened salmon.
